  • 2 ½ sticks unsalted butter (room temperature)
  • 1 ½ cups brown sugar
  • ½ cup granulated sugar
  • 4 eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 1 cup apple cider
  • 2 cups apple cider (for glaze)
  • 2 Tablespoons salted butter (for glaze)
  • ⅓ cup granulated sugar (for glaze)
  • 2 Tablespoons demerara or turbinado sugar (for glaze)
  • 1 ½ teaspoons cinnamon (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 12-cup bundt pan.
  2. In a mixing bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  3. Cream together butter, brown sugar, and granulated sugar in a stand mixer until fluffy.
  4. Add eggs one at a time and mix in the vanilla extract.
  5. Gradually combine the dry ingredients with the wet mixture while adding apple cider until well blended.
  6. Pour the batter into the prepared bundt pan and bake for about 40–50 minutes or until a toothpick comes out clean.
  7. While baking, prepare the glaze by reducing apple cider in a saucepan until thickened; stir in butter until melted.
  8. Once cooled slightly, brush the glaze over the warm cake.
