  • ½ cup quick-cooking oats
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ cup unsalted butter, melted
  • 12 oz. cream cheese
  • ½ cup of sugar
  • 1 ½ teaspoons vanilla
  • 2 tablespoons flour
  • 1 large egg

Instructions

  1. Prepare the Apple Filling: In a medium saucepan over medium heat, combine diced apples, melted butter, light brown sugar, cinnamon, nutmeg, lemon juice, corn starch, and water. Cook for about 5-7 minutes until apples soften slightly.
  2. Make the Graham Cracker Crust: Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, brown sugar, cinnamon, and melted butter in a bowl. Press into a pie dish.
  3. Prepare the Crisp Topping: Mix flour, brown sugar, oats, cinnamon, nutmeg, and melted butter until crumbly.
  4. Create the Cheesecake Layer: Beat cream cheese and sugar until smooth; add vanilla extract and flour then mix in one egg just until blended.
  5. Assemble the Pie: Pour half of the cheesecake filling into the crust, layer apple filling on top, add remaining cheesecake filling and sprinkle with crisp topping.
  6. Bake: Bake for approximately 45 minutes until set in the center. Let cool completely before serving.
