  • 200 g digestive or graham crackers
  • 1/2 tsp ground nutmeg
  • 1.5 tsp ground cinnamon
  • 1.5 tbsp dark brown sugar
  • 50 g butter (melted)
  • 150 g diced apples
  • 1 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • 100 g all-purpose flour
  • 80 g dark brown sugar
  • 70 g butter (room temperature)
  • 600 g cream cheese (full fat)
  • 200 g granulated sugar
  • 150 g sour cream
  • 1 tbsp cornstarch
  • 2 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, mix crushed crackers with nutmeg, cinnamon, brown sugar, and melted butter; press into a springform pan.
  3. Mix diced apples with granulated sugar and cinnamon; set aside.
  4. Beat cream cheese and granulated sugar until smooth; add sour cream, cornstarch, vanilla extract, and eggs one at a time. Gently fold in flour.
  5. Pour half the cheesecake filling over the crust; layer half the apple mixture on top. Repeat with remaining filling and apples.
  6. Bake for about 85 minutes until set but slightly jiggly in the center.
  7. Cool at room temperature before refrigerating for at least two hours or overnight.
