Authentic Mexican Rice is a vibrant and flavorful side dish that brings a taste of Mexico right to your table. This easy-to-make recipe combines long grain white rice with rich tomato sauce, garlic, and onions, creating a delightful accompaniment for tacos, grilled meats, or as part of a burrito bowl.

Ingredients

  • 1 1/2 cups long grain white rice
  • 1/4 cup vegetable oil
  • 1 teaspoon minced garlic
  • 1/4 medium onion, finely diced
  • 1/4 cup tomato sauce (or 2 pureed tomatoes)
  • 2 teaspoons tomato bouillon
  • 1/4 teaspoon salt
  • 1 carrot, diced
  • 1/2 cup peas (frozen or fresh)
  • 3 cups water
  • Optional: 1-3 whole serrano peppers

Instructions

  1. Rinse the rice in a fine mesh strainer until the water runs clear to remove excess starch.
  2. In a large saucepan over medium-high heat, add oil and toast the rinsed rice until lightly golden brown (about 10 minutes).
  3. Mix in tomato sauce, minced garlic, diced onion, tomato bouillon, salt, diced carrots, peas, and water. Add serrano peppers if desired.
  4. Bring to a boil; cover and reduce heat to low. Cook for about 20 minutes until all water is absorbed.
  5. Remove from heat and let sit for an additional five minutes before fluffing with a fork.
