  • 1 package (32 ounces) frozen Tater Tots
  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 green onions, chopped
  • 1 package (8 ounces) shredded cheese of your choice
  • Salsa for serving

Instructions

  1. Preheat the oven to 350°F. Lightly spray a 9×13-inch baking dish with nonstick cooking spray and line the bottom with frozen Tater Tots.
  2. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. Stir in half of the chopped green onions and shredded cheese.
  3. Pour the egg mixture over the Tater Tots in the baking dish.
  4. Bake uncovered for 45 to 50 minutes until the eggs are set and heated through.
  5. Remove from the oven and sprinkle with remaining green onions and cheese. Return to the oven for an additional 3 to 5 minutes until cheese melts.
  6. Serve warm topped with salsa.
