  • 1 red bell pepper, diced

  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup chopped baby spinach
  • 4 large eggs
  • Optional: fresh basil or chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In an oven-safe baking dish or individual ramekins, layer tomatoes, bell pepper, red onion, garlic, and feta cheese. Drizzle with olive oil.
  3. In a small bowl, mix dried oregano, sea salt, thyme, black pepper, and red pepper flakes. Season the vegetables with this mixture.
  4. Bake for about 25 minutes until bubbly.
  5. Stir in chopped spinach and create wells for the eggs. Crack an egg into each well.
  6. Bake for an additional 10 minutes until the eggs reach your desired doneness.
