  • 2 whole shallots
  • 2 heads garlic
  • 2 tbsp olive oil
  • 1 (8 oz) block softened cream cheese
  • 1 cup sour cream
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/2 cup grated parmesan cheese
  • 1/2 cup fresh chopped parsley (plus more for topping)
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp red pepper flakes

Instructions

  1. Preheat your oven to 375°F.
  2. Cut off the tops of the garlic heads and bottoms of the shallots. Drizzle with olive oil and wrap in foil. Roast for 1 hour until soft.
  3. In a mixing bowl, squeeze roasted garlic and shallots out of their skins and mash them into a paste.
  4. Add cream cheese, sour cream, 1/2 cup mozzarella, parmesan, parsley, salt, pepper, and red pepper flakes. Mix until smooth.
  5. Transfer to an 8-inch baking dish, top with remaining mozzarella, then lower oven temperature to 350°F. Bake for 20-25 minutes until bubbly and golden brown.
  6. Garnish with parsley and serve warm with your favorite dipping snacks.
