  • 3 cups crushed Nilla Wafers
  • ¼ cup granulated sugar
  • 5 tablespoons unsalted butter (melted)
  • 32 ounces cream cheese (softened)
  • 1 cup mashed ripe banana (about 2 large bananas)
  • ½ cup sour cream
  • 1 cup granulated sugar
  • 1 box (3.4 oz) dry instant banana cream pudding mix
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • Whipped cream for topping
  • Sliced bananas for garnish

Instructions

  1. Preheat oven to 325°F (163°C). Prepare a 9-inch springform pan by lining it with parchment paper.
  2. For the crust, crush Nilla Wafers and mix with sugar and melted butter. Press evenly into the bottom of the pan and bake for 10 minutes; cool.
  3. In a mixer, beat softened cream cheese until smooth. Add mashed bananas, sour cream, sugar, pudding mix, and vanilla; mix well.
  4. Add eggs one at a time on low speed until just combined.
  5. Wrap the springform pan in foil and place it in a roasting pan filled with boiling water. Pour filling into crust.
  6. Bake for 70-80 minutes until edges are set but center jiggles slightly. Turn off oven and let it cool inside for an hour before refrigerating overnight.
  7. Once chilled, remove from the pan and top with whipped cream, sliced bananas, and additional Nilla Wafers.
