  • 1 pound jumbo shrimp (peeled and deveined)
  • 3 cups thinly sliced cabbage (mix of green and purple)
  • ¾ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 1 to 2 teaspoons Sriracha
  • 12 soft flour tortillas
  • Vegetable oil for frying
  • 3 scallions (thinly sliced diagonally)
  • ¼ cup cilantro, roughly chopped
  • ¼ cup sour cream
  • Juice of 1 lime
  • 1 cup buttermilk
  • 1 to 2 cups cornstarch (for dredging)
  • Salt and pepper

Instructions

  1. In a large bowl, combine cabbage, scallions, cilantro, mayonnaise, sour cream, and lime juice. Mix well and set aside.
  2. In a medium bowl, whisk together mayonnaise, Thai sweet chili sauce, and Sriracha until smooth.
  3. Season shrimp with salt and pepper. Toss them in buttermilk until coated.
  4. Heat vegetable oil in a frying pan to 350°F – 365°F.
  5. Dredge shrimp in cornstarch until well-coated.
  6. Fry shrimp in batches for about 4 minutes or until golden brown.
  7. Toss fried shrimp in half of the bang bang sauce while warm.
  8. Assemble tacos by placing fried shrimp on warm tortillas, topping with slaw mix and extra sauce if desired.
