  • ¼ cup Thai sweet chili sauce

  • 1 tablespoon honey
  • 1 pound shrimp (peeled, deveined)
  • ½ cup buttermilk
  • 1 cup cornstarch
  • Canola oil (for frying)

Instructions

  1. In a small bowl, mix the mayonnaise, Thai sweet chili sauce, Sriracha, and honey until smooth; set aside.
  2. Coat the shrimp in buttermilk in another bowl.
  3. Pour cornstarch into a separate bowl for coating.
  4. Heat about 1 inch of canola oil in a heavy-bottom pot to 375°F.
  5. Fry shrimp in batches: remove from buttermilk, coat in cornstarch, and fry for 1-2 minutes until golden brown.
  6. Coat fried shrimp with the prepared sauce immediately and serve hot.
