  • 1 head fresh romaine lettuce (chopped)
  • 1/2 cup grape tomatoes (sliced in half)
  • 1/2 cup canned corn kernels (drained)
  • 1/2 cup canned black beans (drained)
  • 1/4 cup red onion (diced)
  • 2/3 cup cheddar cheese (shredded)
  • 1/4 cup ranch dressing
  • 1 1/4 cup honey BBQ sauce (divided)
  • tortilla strips or croutons

Instructions

  1. Prepare the chicken by patting it dry, tenderizing it to an even thickness, and marinating in BBQ sauce for 10 minutes.
  2. Cook the chicken on a hot grill or cast iron pan for about 4 minutes per side until cooked through.
