  • 2 lbs chicken wings
  • 2 tsp salt
  • 2 tsp baking powder
  • 2 tsp cornstarch
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • ½ cup BBQ sauce

Instructions

  1. Pat the chicken wings dry and place them in a large bowl. Mix salt and baking powder in a separate bowl, then toss with the wings.
  2. Line a sheet pan with parchment paper and set a rack on top. Arrange wings on the rack and refrigerate for at least an hour.
  3. Preheat your oven to 300°F. Pat the wings dry again.
  4. In another bowl, combine cornstarch, garlic powder, smoked paprika, onion powder, and black pepper. Toss the wings in this mixture until coated.
  5. Bake at 300°F for 12 minutes per side.
  6. Increase the oven temperature to 450°F. Toss wings in BBQ sauce and return them to the rack.
  7. Bake at 450°F for another 10-12 minutes until crispy.
