  • 2 tsp salt
  • 2 tsp baking powder
  • 2 tsp cornstarch
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ cup BBQ sauce

Instructions

  1. Pat the chicken wings dry and place them in a large mixing bowl.
  2. Combine salt and baking powder; toss with wings until coated.
  3. Refrigerate for at least an hour on a parchment-lined sheet pan with a rack above it.
  4. Preheat oven to 300°F (150°C). Pat wings dry again.
  5. In another bowl, mix cornstarch, garlic powder, smoked paprika, and black pepper; coat wings.
  6. Bake wings for 12 minutes, flip them over, then bake for another 12 minutes.
  7. Increase oven temperature to 450°F (230°C) and toss half of the baked wings in BBQ sauce; return to oven.
  8. Bake for an additional 10-12 minutes until crispy and charred.
