  • 4 to 5 pounds chuck roast
  • ½ tablespoon kosher salt
  • ½ tablespoon black pepper
  • 1 ½ tablespoon olive oil
  • 12 guajillo chiles
  • 5 ancho chiles
  • 5 árbol chiles
  • 2 large Roma tomatoes
  • ½ medium yellow onion
  • 1 Mexican cinnamon stick
  • 3 bay leaves
  • ½ teaspoon whole black peppercorns
  • water
  • 2 cups beef broth
  • ¼ cup distilled white vinegar
  • 5 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon dried Mexican oregano
  • ½ teaspoon ground cloves
  • Corn tortillas
  • 2 cups shredded cheese
  • ½ white onion, diced
  • ½ cup chopped cilantro
  • Lime wedges

Instructions

  1. 1. Season the chuck roast with kosher salt and black pepper. Sear in olive oil until browned.
  2. 2. Boil guajillo chiles, ancho chiles, árbol chiles, tomatoes, onion, and spices in water; then blend into a smooth sauce.
  3. 3. Combine seared meat with the sauce; simmer for 3 to 3½ hours until tender.
  4. 4. Shred the beef and fry corn tortillas filled with meat and cheese until crispy.
  5. 5. Serve with consomé, cilantro, onions, and lime wedges.
