  • 1 1/2 cups crushed Biscoff cookies
  • 1/4 cup salted butter, melted
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup salted butter, melted
  • 2 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 1/3 cup smooth Biscoff spread

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8 x 8-inch baking pan with parchment paper.
  2. In a bowl, mix crushed Biscoff cookies with melted butter. Press this mixture into the bottom of the prepared pan to form the crust.
  3. In another bowl, whisk together eggs, granulated sugar, and brown sugar until creamy and lightened in color.
  4. Add melted butter and vanilla extract; mix until combined.
  5. Sift in flour, cocoa powder, and baking powder. Fold gently until just combined.
  6. Pour brownie batter over the crust and spread evenly.
  7. Microwave Biscoff spread for a few seconds until warm; spoon over batter and swirl with a knife.
  8. Bake for 22-25 minutes or until a toothpick comes out mostly clean.
  9. Allow to cool completely before cutting into squares.
