  • 13 teaspoons Biscoff cookie butter
  • ½ cup butter (room temperature)
  • ½ cup Biscoff cookie butter
  • ½ cup brown sugar
  • ⅓ cup granulated sugar
  • 1 large egg (room temperature)
  • 2 teaspoons vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups all-purpose flour
  • 2 tablespoons Biscoff cookie butter (for drizzling on top)
  • Flaked salt (for sprinkling on top)

Instructions

  1. Freeze small balls (13 one-teaspoon portions) of Biscoff cookie butter on parchment paper.
  2. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  3. In a medium bowl, beat together butter and half a cup of Biscoff cookie butter until smooth. Add brown and granulated sugars, mixing until fluffy. Incorporate the egg and vanilla.
  4. Mix in salt, baking soda, and flour until combined, but don’t overmix.
  5. Scoop out dough (about three tablespoons) and encase each frozen cookie butter ball in dough. Place on prepared baking sheets.
  6. Bake for 11-13 minutes or until edges are golden brown. Drizzle melted cookie butter on top and sprinkle with flaked salt.
