  • 2 cups blackberries
  • 3 tbsp balsamic vinegar
  • 6 tbsp sugar
  • 2 tbsp lemon juice
  • 300 g double cream brie cheese
  • 8 slices sourdough bread
  • Butter (as needed)
  • Chopped fresh thyme (for garnish)

Instructions

  1. In a saucepan, combine blackberries, balsamic vinegar, sugar, lemon juice, and a pinch of salt. Boil over medium-high heat then reduce and simmer while mashing berries until thickened (7-10 minutes). Cool.
  2. Slice brie into ½ inch pieces.
  3. Butter one side of four sourdough slices; place butter-side down in a skillet. Add brie and fry until golden brown.
  4. Spread blackberry jam on the remaining bread slices; place jam-side down over melted brie and butter the top side before flipping.
  5. Fry until both sides are golden brown and cheese melts. Let cool slightly before slicing.
