  • 1/4 cup confectioners’ sugar
  • 1/4 cup heavy cream
  • 1 cup cream cheese, softened
  • 1/2 cup confectioners’ sugar
  • 1 tsp vanilla extract
  • 2 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tsp cornstarch
  • 1/4 cup shelled pistachios, chopped
  • Fresh blackberries for garnish

Instructions

  1. Prepare the crust: Mix crushed biscuits with melted butter. Press into a lined 8×8 inch pan and chill for 20 minutes.
  2. Make the pistachio layer: Blend ground pistachios with confectioners’ sugar and heavy cream until smooth. Spread over the chilled crust and return to the fridge for another 20 minutes.
  3. Create the cream cheese layer: Beat together cream cheese, confectioners’ sugar, and vanilla extract until creamy. Spread over the pistachio layer and chill until firm.
  4. Prepare blackberry topping: Cook fresh blackberries with granulated sugar, lemon juice, and cornstarch until thickened. Let cool then spread over the cream cheese layer.
  5. Chill: Refrigerate for at least 2 hours or overnight before serving.
