  • 2 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/3 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Lemon wedges

Instructions

  1. Cook spinach in a skillet over medium heat until wilted (2-3 minutes). Drain excess liquid. Combine cooked spinach with cream cheese, Parmesan cheese, minced garlic, salt, and pepper in a bowl. Mix until smooth.
  2. Create pockets in the salmon fillets using a sharp knife without cutting through completely.
  3. Generously fill each salmon pocket with the creamy spinach mixture.
  4. Season the tops of the stuffed fillets with paprika, garlic powder, onion powder, black pepper, and salt.
  5. Heat olive oil in a skillet over medium-high heat and sear each fillet for 2-3 minutes per side until crispy.
