  • 23 large sweet potatoes, peeled and cut into chunks
  • 1 large onion, peeled and chopped
  • 2 cloves garlic, minced
  • 1 large red bell pepper, seeded and chopped
  • 1/4 cup extra-virgin olive oil
  • Freshly ground black pepper and sea salt to taste
  • Flat leaf parsley for garnish

Instructions

  1. Boil sweet potato chunks for about 5 minutes until slightly tender but not fully cooked. Drain well.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sauté chopped onions until golden brown (about 3-4 minutes).
  4. Add boiled sweet potatoes, red bell pepper, and minced garlic to the skillet. Cook for 7-10 minutes until golden brown around the edges.
  5. Season with black pepper and sea salt to taste.
  6. Garnish with chopped flat leaf parsley before serving.
