  • 1 3/4 cups brown sugar (light or dark)
  • 1 large egg
  • 1 large egg yolk
  • 2 1/2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon fine sea salt

Instructions

  1. In a small pan, melt half cup of butter over medium heat until it turns amber and has a nutty aroma. Let cool for about 5 minutes.
  2. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  3. In a large mixing bowl, combine the melted butter, remaining butter, and brown sugar using an electric mixer on medium-high speed until creamy (about three minutes). Add the egg, egg yolk, and vanilla extract; mix for one more minute.
  4. Gradually incorporate the flour, baking soda, and salt until combined. If dough is too soft, add additional flour as needed. Chill the dough in the refrigerator for at least 30 minutes.
  5. Scoop rounded tablespoons onto prepared baking sheets, spacing them two inches apart. Bake for about ten minutes or until edges are lightly golden while keeping centers soft.
  6. Allow cookies to cool on the baking sheet before transferring them to a wire rack.
