  • 1 lb boneless skinless chicken breast
  • ½ cup blue cheese dressing (or ranch)
  • ½ cup buffalo sauce
  • 2 tablespoons butter
  • ½ cup yellow onion, diced
  • 1 stick celery, diced
  • 3 cloves garlic, minced
  • 14.5 oz can diced tomatoes (undrained)
  • 4 cups chicken broth
  • 1 lb penne pasta
  • 8 oz cream cheese, softened
  • 1.5 cups cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded

Instructions

  1. In a large skillet over medium heat, melt 1 tablespoon of butter. Add cubed chicken and cook until browned (6–8 minutes). Remove from skillet.
  2. In the same skillet, add remaining butter along with onions and celery; sauté for about 3–4 minutes until soft. Stir in garlic for another minute.
  3. Add undrained tomatoes, chicken broth, penne pasta, buffalo sauce, and cooked chicken back into the skillet. Bring to a boil then reduce to simmer; cover and cook for 12–15 minutes until pasta is tender.
  4. Lower heat and stir in cream cheese until melted; add cheddar and mozzarella while stirring until fully combined.
  5. Serve hot with optional red pepper flakes for added heat.
