  • 3 large shallots
  • 1/2 cup plus 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 3/4 cup walnuts, finely chopped
  • 1 tablespoon fresh rosemary

Instructions

  1. Preheat oven to 400°F.
  2. Prepare the butternut squash by peeling, halving, and slicing into 1/4-inch half-moon pieces.
  3. Trim and slice fennel bulbs into similar half-moon shapes.
  4. Core and slice apples into 1/4-inch half-moon pieces.
