  • 1 pound spicy Italian sausage (casings removed)
  • 4 cloves garlic (minced)
  • 1 bunch Swiss chard (chopped)
  • ½ teaspoon red chili flakes
  • ½ cup creme fraiche
  • ½ cup grated Parmesan cheese
  • Salt and black pepper (to taste)

Instructions

  1. Cook rigatoni in salted boiling water until al dente, reserving 1 cup of pasta water before draining.
  2. In a large sauté pan, heat olive oil over medium heat. Add butternut squash and onion; cook for 8-10 minutes until tender.
  3. Push veggies aside; add sausage and cook until browned, about 5-7 minutes.
  4. Stir in garlic, Swiss chard, and red chili flakes; cook for an additional 2 minutes until chard wilts.
  5. Pour in reserved pasta water, then stir in creme fraiche and Parmesan until creamy.
  6. Combine drained pasta with the sauce, tossing well to coat. Serve immediately with extra cheese if desired.
