  • 8 Tbsp Unsalted Butter, Softened
  • 1/2 Cup Powdered Sugar
  • 1 Egg
  • 1/4 tsp Vanilla Extract
  • 1 Cup Coarsely Crushed Pretzels
  • 1/2 Cups All Purpose Flour
  • 8 Tbsp Unsalted Butter
  • 1 Cup Light Brown Sugar
  • 1 Cup Boiling Water
  • 3 Tbsp Cornstarch
  • 2 Tbsp All Purpose Flour
  • 1/2 tsp Salt
  • 1 1/2 Cups Milk
  • 3 Egg Yolks
  • 1 tsp Vanilla Extract
  • 2 Cups Heavy Whipping Cream
  • 1/4 Cup Light Brown Sugar

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine softened butter and powdered sugar until creamy. Add egg and vanilla extract; mix well. Stir in crushed pretzels and flour until a dough forms. Press into tart pan evenly and bake for 10 minutes until golden.
  2. In a saucepan over medium heat, melt butter with brown sugar. Gradually add boiling water while stirring until dissolved. In another bowl, mix cornstarch, flour, salt, and milk until smooth. Slowly add this mixture to the saucepan, stirring constantly until thickened. Remove from heat and stir in egg yolks and vanilla.
  3. Pour butterscotch filling into cooled pretzel crust. Let set at room temperature for one hour, then chill in the fridge for at least two hours.
  4. For the topping, beat heavy whipping cream with light brown sugar until soft peaks form and spread on top of tart before serving.
