  • 3 chicken breasts, cut into small strips
  • 13 tbsp Cajun seasoning
  • 1 large onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 1 cup chicken broth
  • ¼ cup heavy cream
  • 1 cup shredded spinach
  • 1 tbsp olive oil
  • ½ tbsp butter
  • 1 tsp salt
  • 2 tbsp chopped sun-dried tomatoes
  • 1 tbsp tomato paste

Instructions

  1. In a bowl, combine chicken, Cajun seasoning, and salt. Heat olive oil and butter in a chef’s pan over medium heat; add chicken and cook until browned.
  2. Add onion, garlic, sun-dried tomatoes, and tomato paste; sauté for about five minutes.
  3. Stir in orzo until coated; pour in chicken broth and bring to a simmer. Cover and cook for 20 minutes.
  4. Uncover, add spinach until wilted; stir in heavy cream and Parmesan cheese until creamy.
