  • ½ cup heavy whipping cream
  • ¾ cup ricotta cheese
  • ½ cup powdered sugar
  • ½ teaspoon vanilla
  • 1 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350ºF (175ºC).
  2. In a mixing bowl, combine flour, baking powder, and salt; set aside.
  3. Cream together butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually mix in the dry ingredients until incorporated.
  6. Scoop out walnut-sized balls of dough, flattening them to about ¼ to ½ inch thick.
  7. Place cookies on a cookie sheet with space between each and bake for about 10 minutes until set.
  8. Cool cookies on a wire rack while preparing the filling.
  9. Whip heavy cream until stiff peaks form; fold in ricotta cheese, powdered sugar, and vanilla extract.
  10. Stir in mini chocolate chips; spread over each cooled cookie.
