  • 1/4 cup basil pesto
  • 1 cup mayonnaise
  • 3/4 cup shredded Parmesan cheese (divided)
  • 1 cup cherry tomatoes (halved)
  • 8 ounces fresh mozzarella (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 2-quart baking dish.
  2. In a large mixing bowl, combine shredded chicken, basil pesto, mayonnaise, half of the Parmesan cheese, salt, and pepper. Mix until well combined.
  3. Spread the chicken mixture evenly in the greased baking dish.
  4. Top with halved cherry tomatoes and chopped mozzarella. Sprinkle the remaining Parmesan cheese on top.
  5. Bake for 20-22 minutes until golden brown and bubbly.
  6. Allow to cool for a few minutes before serving.
