  • 2 tablespoons vegetable oil or melted coconut oil
  • 1 cup granulated sugar
  • 2 large eggs + 1 egg yolk
  • 2 teaspoons pure vanilla extract
  • 3/4 cup cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup chopped pecans
  • 3/4 cup semi-sweet chocolate chips
  • 6 tablespoons unsalted butter (for caramel)
  • 3/4 cup brown sugar
  • 1/4 cup coconut cream or full-fat coconut milk
  • 1/4 teaspoon salt
  • 1.5 tablespoons light corn syrup
  • 1 cup chopped pecans or pecan halves
  • 2 ounces semi-sweet or milk chocolate, finely chopped

Instructions

  1. Preheat oven to 350°F (177°C).
  2. Crush Oreos in a food processor, mix with melted butter, and press into a 9-inch pie dish.
  3. For the brownie filling, melt butter and mix with sugar, eggs, and vanilla. Stir in cocoa powder, flour, salt, pecans, and chocolate chips.
  4. Spread brownie batter into the crust and bake for about 30–40 minutes.
  5. For caramel sauce, combine butter, brown sugar, coconut cream, salt, and corn syrup in a saucepan over medium heat; stir until melted.
  6. Once baked, poke holes in the brownie pie and drizzle warm caramel on top.
