  • 2 3/4 cups all-purpose flour
  • 1 cup unsalted butter (softened)
  • 1 1/2 cups granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons chai spice blend (cinnamon, cardamom, ginger, cloves, allspice)
  • Coating: 1/4 cup granulated sugar mixed with 1 tablespoon ground cinnamon

Instructions

  1. In a medium bowl, whisk together flour, cream of tartar, baking soda, salt, and chai spice blend.
  2. In a large bowl or stand mixer, cream softened butter with granulated and brown sugars until light and fluffy (about 3–4 minutes).
  3. Beat in eggs one at a time followed by the vanilla extract until well combined.
  4. Gradually mix dry ingredients into the wet mixture on low speed until just combined; avoid overmixing.
  5. Cover dough and chill in the refrigerator for at least 1 hour.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll chilled dough into 1-inch balls and coat in cinnamon-sugar mixture.
  8. Place on prepared baking sheets about 2 inches apart and bake for 10–12 minutes until edges are golden but centers remain soft.
  9. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
