  • 3 large potatoes (peeled and cubed)
  • 12 tbsp olive oil
  • 2 tsp salt
  • 250 g chicken (chopped)
  • 1 onion (finely chopped)
  • 2 garlic cloves (crushed)
  • 2 cups grated cheddar cheese
  • 5 eggs
  • ½ cup milk
  • ¾ cup heavy cream
  • 1 tsp pepper

Instructions

  1. Preheat your oven to 180ºC (350ºF).
  2. Toss cubed potatoes with olive oil and salt; roast on a baking sheet for about 30 minutes until golden.
  3. In a frying pan, cook chopped chicken until crispy, then sauté onions until soft; stir in garlic briefly.
  4. In a casserole dish, combine roasted potatoes with the chicken mixture and half of the cheese.
  5. Whisk eggs, milk, cream, salt, and pepper together; pour over the potato blend.
  6. Top with remaining cheese and bake for 30–40 minutes until golden brown.
