  • 0.33 cup honey
  • 23 tablespoons hot sauce
  • 1 cup sour cream
  • 12 fresh jalapeños, deseeded and chopped
  • 1 teaspoon lime juice
  • 0.5 teaspoon salt
  • 8 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons butter
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. In a bowl, combine chicken pieces with smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Cook the seasoned chicken in the skillet for 6-8 minutes until fully cooked.
  4. Mix honey and hot sauce in a separate bowl to create the hot honey sauce.
  5. Assemble each quesadilla by layering cooked chicken, cheese, jalapeños, and drizzle with hot honey sauce on one half of each tortilla. Fold over.
  6. Grill the quesadillas in the skillet with butter over medium heat for about 3-4 minutes on each side until golden brown.
