  • 2 cups fresh spinach
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese (divided)
  • 2 tablespoons olive oil (divided)
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. Slice chicken breasts in half horizontally and pound to even thickness.
  3. Marinate chicken in olive oil, garlic, Italian seasoning, salt, and pepper for 15-30 minutes.
  4. Sauté spinach in remaining olive oil until wilted; set aside.
  5. Mix cream cheese with sautéed spinach and half of the mozzarella until combined.
  6. Arrange marinated chicken in the baking dish, spread spinach mixture on top, and sprinkle remaining mozzarella.
