  • 2 pounds salmon (skin removed)
  • 56 cups coleslaw mix
  • 1/2 cup thinly sliced red onion
  • 3 tablespoons white vinegar
  • 1 tablespoon lime juice
  • 23 tablespoons olive oil
  • Zest and juice of one lime
  • 2 teaspoons chili powder
  • 1/4 teaspoon garlic salt
  • Pinch of cayenne pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Flour tortillas for serving

Instructions

  1. Prepare the cabbage slaw by combining coleslaw mix, red onion, dill, cilantro, vinegar, lime juice, salt, and pepper in a bowl. Refrigerate until ready to serve.
  2. Preheat your oven to 425°F (220°C) and grease a baking sheet with olive oil.
  3. Season the salmon with lime zest, lime juice, chili powder, garlic salt, cayenne pepper, salt, and pepper. Place it on the baking sheet.
  4. Roast the salmon for 12-15 minutes until flaky. Flake into large chunks.
  5. Warm flour tortillas and fill them with roasted salmon and slaw. Top with sriracha ranch sauce if desired.
