  • 1/2 cup Dutch-process cocoa powder
  • 3/4 cup unsalted butter
  • 3/4 cup light brown sugar
  • 2 egg yolks
  • 5 oz chopped chocolate (for ganache)
  • 1/4 cup cherry preserves

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together softened butter and sugars until fluffy. Add egg yolks and vanilla; mix well.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Scoop tablespoon-sized amounts onto the baking sheet; create indents in the center of each cookie with your thumb.
  6. Bake for about 10 minutes until set; cool before filling.
  7. For ganache, heat heavy cream until hot but not boiling; pour over chopped chocolate and stir until smooth.
  8. Once cookies are cool, fill each indent with cherry preserves followed by drizzling ganache on top.
