  • 1 1/2 tsp dry baker’s yeast
  • 3 1/2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • Pinch of salt
  • 1 room temperature egg
  • 1/3 cup melted and cooled butter
  • Filling: Unsweetened cocoa powder, brown sugar, ground cinnamon, softened butter, vanilla extract
  • Glaze: Powdered sugar, unsweetened cocoa powder, heavy cream

Instructions

  1. In a small bowl, mix lukewarm milk with dry yeast and let sit until frothy (5–10 minutes).
  2. In a stand mixer bowl, combine flour, sugar, cocoa powder, and salt; mix well.
  3. Add egg, melted butter, and yeast mixture to dry ingredients; knead until smooth (about 3 minutes).
  4. Cover and let rise at room temperature until doubled (1.5–2 hours).
  5. Prepare filling by mixing brown sugar, cocoa powder, cinnamon, and vanilla.
  6. Roll dough into a rectangle (0.5 cm thick), spread softened butter over it.
  7. Sprinkle filling mixture evenly on top; roll tightly into a log.
  8. Cut into 9–11 pieces and place in a greased baking dish.
  9. Let rise again for 30–60 minutes until puffed.
  10. Preheat oven to 350°F (180°C) and bake for 20–25 minutes until golden brown.
  11. Cool slightly before glazing with the mixture of powdered sugar, cocoa powder, and heavy cream.
