2 boneless, skinless chicken breasts
6 slices turkey bacon
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and black pepper, to taste
1/2 cup mayonnaise
1/4 cup ranch dressing
1 cup shredded iceberg lettuce
1/4 cup finely diced red onion
4 sandwich hoagie rolls
Instructions
Preheat your grill or skillet over medium-high heat. Season chicken breasts with garlic powder, smoked paprika, salt, and pepper. Cook in olive oil for about 5-7 minutes on each side until fully cooked (165°F internal temperature). Let rest before chopping.
In the same skillet, fry turkey bacon until crispy; then chop into small pieces.
In a mixing bowl, combine chopped chicken with mayonnaise and ranch dressing. Fold in chopped bacon, shredded lettuce, and diced onion.
Split hoagie rolls lengthwise and optionally toast them. Spoon the chicken mixture onto each roll and serve immediately.
