  • 1 cup sliced bell peppers
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika (optional)
  • 1/2 cup tomatoes
  • 1 cup chopped romaine lettuce
  • 1/3 cup black beans
  • 1 avocado, sliced
  • 1/2 cup low-fat plain Greek yogurt
  • 1 tablespoon light mayonnaise
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh cilantro, chopped
  • 1 chipotle chile pepper in adobo
  • 1/2 teaspoon dried dill (or parsley)
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Salt and freshly ground pepper (to taste)

Instructions

  1. Marinate chicken in olive oil, lime juice, cilantro, salt, cumin, and paprika for at least 20 minutes.
  2. Cook marinated chicken in a skillet over medium-high heat for 6–7 minutes per side until fully cooked.
  3. Sauté sliced bell peppers in the same skillet for 2–3 minutes until tender.
  4. Assemble the salad by placing romaine lettuce on plates and topping with chicken, bell peppers, tomatoes, black beans, and avocado slices.
  5. Blend dressing ingredients in a food processor until smooth; drizzle over the salad before serving.
