  • 16 oz cottage cheese (about 2 cups)
  • 1 lb ground turkey sausage
  • 2 cups chopped spinach
  • 1 cup quartered cherry tomatoes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp black pepper
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). In a skillet over medium heat, cook the ground turkey sausage until browned. Set aside to cool slightly.
  2. In a blender, combine eggs, cottage cheese, garlic powder, onion powder, black pepper, and salt. Blend until smooth.
  3. Pour the mixture into a greased 9×13 baking pan. Stir in the cooked ground turkey sausage, chopped spinach, and quartered cherry tomatoes until well mixed.
  4. Bake in the preheated oven for 40-42 minutes or until a knife inserted in the center comes out clean. Allow to cool slightly before slicing.
