  • 2 whole heads of garlic, peeled
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 6 cups chicken or vegetable broth
  • 2 tablespoons butter
  • 4 egg yolks
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Sauté the chopped onion until softened, about 5 minutes.
  2. Add the peeled garlic cloves and cook for an additional 2-3 minutes, stirring frequently.
  3. Pour in the chicken or vegetable broth along with thyme sprigs and bay leaves. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Remove the herbs from the pot and season the soup with salt and pepper.
  5. In a small bowl, whisk together egg yolks and grated Parmesan cheese.
  6. Temper the egg mixture by gradually whisking in hot soup before returning it to the pot.
  7. Simmer for another 5 minutes while stirring continuously until slightly thickened.
