  • 4 slices hearty sourdough bread
  • 4 ounces cooked chicken breast, thinly sliced
  • 2 tablespoons BBQ sauce
  • 2 tablespoons mayonnaise
  • 1 ripe avocado, peeled and sliced
  • 4 slices cheddar cheese
  • 2 medium tomatoes, sliced
  • 4 leaves romaine lettuce
  • Butter for grilling

Instructions

  1. Preheat oven to 400°F (200°C). Place bacon on a baking sheet and bake until crispy (15-20 minutes). Drain on paper towels.
  2. In a bowl, mix BBQ sauce with mayonnaise for the spread.
  3. Butter one side of each slice of sourdough bread.
  4. Heat a skillet over medium heat and grill two slices buttered side down; top each with cheddar cheese.
  5. Layer cooked chicken on top of the cheese.
  6. Spread the BBQ mayo on the remaining bread slices.
  7. Layer avocado, tomato, bacon, and lettuce on top of the chicken; season with salt and pepper.
  8. Top with remaining bread slices (buttered side up) and grill until golden brown on both sides.
  9. Slice diagonally and serve warm.
