2 cans whole kernel corn (15.25 oz each, drained)
1 can black beans (15 oz, rinsed and drained)
½ cup mayonnaise
4 oz cream cheese (softened)
1 cup mild cheddar cheese (shredded)
1 cup mozzarella cheese (shredded)
½ cup parmesan cheese (grated)
1 large jalapeño (seeded and finely diced)
1 medium red onion (finely diced)
Salt and pepper to taste
Chopped green onion for garnish
Instructions
In a large mixing bowl, combine the corn, black beans, mayonnaise, cream cheese, cheddar cheese, mozzarella cheese, parmesan cheese, jalapeño, red onion, salt, and pepper.
Stir until well combined and creamy.
Garnish with chopped green onions.
Serve immediately with tortilla chips or crackers.
