  • 1 tbsp olive oil
  • 2 400g tins white beans, drained
  • 1 white onion, diced
  • 1 carrot, sliced
  • 1 celery stick, diced
  • 2 garlic cloves, minced
  • 1 bay leaf
  • 1 tbsp tomato paste
  • 80ml white grape juice
  • 500ml vegetable stock
  • 1 tsp Italian seasoning
  • 1 sprig of fresh rosemary, diced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Pinch of red pepper flakes
  • 1 cup kale, chopped
  • 1/2 lemon, juice

Instructions

  1. Heat olive oil in a large pan over medium heat. Add diced onion, carrot, and celery; sauté for 7–9 minutes until softened.
  2. Stir in minced garlic, tomato paste, Italian seasoning, rosemary, oregano, salt, pepper, and red pepper flakes. Cook for 1–2 minutes until fragrant.
  3. Pour in white grape juice to deglaze the pan; cook for a few minutes before adding vegetable stock and drained white beans.
  4. Blend about one-third of the soup using a hand blender for creaminess; simmer for an additional 5–8 minutes until thickened.
  5. Mix in chopped kale and adjust seasoning if needed before serving.
