  • 1 loaf artisan sourdough bread (cut into cubes)
  • 6 tablespoons unsalted butter
  • 1 1/2 cups diced celery
  • 1 cup diced yellow onion
  • 2 Honeycrisp apples (diced)
  • 3/4 cup dried cranberries
  • 1/4 cup chopped flat leaf parsley
  • 1 tablespoon fresh thyme (finely chopped)
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh sage (finely chopped)
  • 1 egg
  • 2 cups low sodium chicken broth

Instructions

  1. Preheat the oven to 300°F. Spread bread cubes on baking sheets and toast for 25 minutes. Increase the temperature to 325°F.
  2. In a skillet over medium heat, melt butter and sauté onions and celery until soft. Add apples, cranberries, and herbs; cook for an additional few minutes.
  3. In a large mixing bowl, combine toasted bread with the vegetable mixture.
  4. Whisk together the egg and chicken broth in another bowl; pour over the bread mixture and stir until combined.
  5. Transfer to a greased baking dish. Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 20 minutes until golden brown.
