  • 1 tablespoon butter or olive oil
  • 1 tablespoon garlic
  • 1 cup onion (chopped)
  • 1 cup carrots (chopped)
  • 1 1/2 cups celery (chopped)
  • 1 1/2 cups bell pepper (chopped)
  • 1 1/2 pounds chicken breast
  • 2 tablespoons Cajun seasoning
  • 2 teaspoons hot sauce
  • 1 (14 ounce) can fire roasted tomatoes, drained
  • 3 cups chicken broth
  • 1/4 cup heavy cream
  • 8 ounces cream cheese (softened)

Instructions

  1. Heat a large pot or Dutch oven over medium heat. Add the olive oil and sauté the garlic, onion, celery, bell pepper, and carrots for about 3-4 minutes until they are tender.
  2. Add the chicken breast to the pot. Top it with Cajun seasoning, hot sauce, drained fire roasted tomatoes, and chicken broth. Bring the mixture to a simmer, cover with a lid, and reduce heat to medium-low.
  3. Allow the soup to cook for 30 minutes while stirring occasionally. Once the chicken is tender and fully cooked through, remove it from the pot and shred it using two forks.
  4. While shredding the chicken on a cutting board, add heavy cream and softened cream cheese to the pot. Whisk until smooth and creamy.
  5. Stir shredded chicken back into the soup. Serve immediately topped with green onions and additional hot sauce if desired.
