  • 3 cups cornflakes (crushed to 1 cup)
  • 8 tbsp unsalted butter (divided)
  • 4 green onions (sliced)
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup heavy whipping cream
  • 1 1/2 cups half-and-half cream
  • 2 cups sharp cheddar cheese (shredded)
  • 2 lbs crinkle-cut carrots (cooked and drained)
  • 1 tbsp parsley flakes

Instructions

  1. Preheat oven to 350°F. In a large mixing bowl, combine crushed cornflakes with 4 tablespoons of melted butter; mix well and set aside.
  2. In a skillet over low heat, melt the remaining butter and sauté sliced green onions until soft.
  3. Add flour, salt, and pepper to the skillet; stir continuously while gradually adding heavy whipping cream and half-and-half until smooth. Increase heat to medium and cook until thickened.
  4. Lower heat again, add shredded cheddar cheese to the sauce mixture, stirring until melted. Fold in cooked carrots and parsley flakes.
  5. Spread carrot mixture into a greased 9 x 13-inch baking dish. Sprinkle cornflake topping evenly over the top. Cover with foil and bake for about 40 minutes; remove foil and bake an additional 5 minutes or until bubbly and golden brown.
