  • 12 oz spaghetti
  • 2 salmon fillets, boned and skinned
  • 1 tsp butter
  • 1 tbsp olive oil
  • Juice and zest of 2 lemons
  • 1 cup heavy cream
  • 1/4 tsp salt
  • 3 tbsp coarsely chopped parsley
  • 1/2 tsp cracked black pepper

Instructions

  1. Cook spaghetti according to package instructions in a large pot of boiling salted water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, combine olive oil and butter. Season salmon with black pepper and cook skin-side down for 4-5 minutes on each side until cooked through. Once cooled, flake into bite-sized pieces.
  3. In the same skillet, add lemon juice, zest, salt, and heavy cream. Stir over low heat until warmed through.
  4. Add drained spaghetti to the skillet and toss to coat with sauce. Gently fold in flaked salmon and chopped parsley.
