  • 3 cups cooked shredded chicken (rotisserie works great)
  • 1/2 cup diced green chiles (canned or fresh)
  • 1 small onion (diced)
  • 1/4 cup chopped fresh cilantro (chopped)
  • 2 cups shredded Monterey Jack cheese (divided)
  • 1 cup shredded cheddar cheese (divided)
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream (room temperature)
  • 1/2 teaspoon cumin (ground)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large saucepan, melt butter and whisk in flour to create a roux. Gradually add chicken broth, stirring until thickened.
  3. Stir in sour cream, cumin, salt, and pepper.
  4. In a mixing bowl, combine shredded chicken, diced onion, green chiles, cilantro, and one cup of cheese.
  5. Spread some white sauce in a greased baking dish. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
  6. Pour remaining white sauce over enchiladas and top with remaining cheese.
  7. Bake uncovered for 25-30 minutes until bubbly and golden brown.
