  • 1 lb fresh skinless salmon fillets, cut into 1-inch cubes
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha, adjust to taste
  • 1 tbsp honey
  • 1 tbsp lime juice

Instructions

  1. Cut the salmon into 1-inch cubes and pat dry with paper towels.
  2. Set up your breading station with flour in one bowl, beaten eggs in another, and panko mixed with garlic powder, onion powder, paprika, salt, and black pepper in the third bowl.
  3. Coat each piece of salmon in flour first, then dip it in the beaten eggs, and finally roll it in the panko mixture until fully covered.
  4. Heat about 1 inch of vegetable oil in your skillet over medium heat until hot but not smoking.
  5. Fry the salmon bites in batches for about 2-3 minutes per side or until golden brown and crispy.
  6. In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth and well combined.
  7. Serve immediately with the bang bang sauce drizzled over the crispy salmon bites.
