  • 3 lbs flank steak
  • 1 tablespoon olive oil
  • 1 cup beef broth
  • 1/2 white onion (chopped)
  • 1 bundle cilantro (chopped)
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Juice of 2 fresh limes
  • 24 mini corn tortillas
  • 1/4 cup butter

Instructions

  1. Place flank steak in the crock pot and drizzle with olive oil.
  2. In a mixing bowl, combine minced garlic and spices; rub over the steak until well coated.
  3. Squeeze juice from one lime over the steak; add chopped cilantro and onions on top. Pour beef broth around the meat.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
  5. Shred beef using two forks and squeeze juice from the second lime over it.
  6. Fry mini corn tortillas in a skillet with melted butter until soft.
  7. Assemble tacos with shredded beef and desired toppings.
